Pasta Fagioli Soup
A Hearty Italian Classic
As the air cools and fall edges closer, few dishes bring comfort like a steaming bowl of Pasta Fagioli Soup. This Italian favorite blends ground beef, beans, vegetables, pasta, and rich tomato broth into a warm, flavorful meal that’s perfect for busy weeknights, family dinners, or a cozy Sunday at home.
Ingredients:
1 lb lean ground beef
1 tbsp olive oil
1 cup carrots, diced
1 large onion, diced
1 stalk celery, diced
3 cloves garlic, pressed
1 can diced tomatoes
1 can tomato sauce
32 oz beef broth
1 can Great Northern beans, drained
1 can red kidney beans, drained
1 cup ditalini pasta
1 tbsp Italian seasoning
1 tsp salt (adjust to taste)
1 tsp onion powder
1 tsp garlic powder
1 tsp black pepper (adjust to taste)
2 tbsp fresh basil (optional)
Directions:
In a large pot, heat olive oil and brown the ground beef. Drain excess fat and set aside.
In the same pot, sauté carrots, onion, celery, and garlic until softened.
Stir in diced tomatoes, tomato sauce, and return beef to the pot. Mix well.
Add beans and beef broth. Simmer for 10 minutes.
Stir in pasta and Italian seasoning. Cook another 10 minutes until pasta is tender.
Season with salt, pepper, and herbs to taste.
To Serve:
Top with freshly grated Parmesan and serve with warm garlic bread.
This one-pot wonder is hearty enough to stand alone but pairs beautifully with a crisp salad or crusty loaf. A true crowd-pleaser that brings a taste of Italy right to your Mid-Michigan table!
